Slow Cooker Creamy Spinach Tortellini Soup
Description
This soup combines chicken broth thickened with flour and seasoned with a blend of dried basil, oregano, thyme, and two types of paprika for layered flavor. Onions, garlic, canned diced tomatoes, and tomato paste enrich the base. After slow cooking for several hours, frozen cheese tortellini is added and cooked until tender.
The final stage incorporates shredded cheddar, baby spinach leaves, heavy cream, and cream cheese to create a creamy, cheesy consistency. The spinach wilts into the soup, contributing color and freshness. Salt and pepper are adjusted to taste, and the soup is served with freshly grated Parmesan for added sharpness.
This slow cooker recipe simplifies the process of making a rich, creamy soup with minimal active cooking time. It’s suitable for cozy dinners, providing a filling dish combining pasta, vegetables, and cheese in a flavorful broth.
