Ingredients

  • 3/4 cup orange juice
  • 1/4 cup lemon juice
  • 1 clove garlic minced
  • 1 teaspoon salt
  • 1 teaspoon cumin ground
  • 1/2 teaspoon black pepper
  • 3-5 pound pork butt roast boneless

Cabbage Slaw

  • 4 cups cabbage shredded
  • 1/4 cup apple cider vinegar
  • 1 teaspoon granulated sugar
  • 1/4 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste

For Serving

  • 12 (6-inch) corn tortillas
  • 1 small red onion sliced
  • 1/2 cup cilantro chopped, fresh

Instructions

  1. In a small bowl whisk together 3/4 cup orange juice, 1/4 cup lemon juice, 1 clove minced garlic, 1 teaspoon salt, 1 teaspoon ground cumin and 1/2 teaspoon black pepper.
  2. Place the 3-5 pound boneless pork butt roast in the bottom of a 5 to 8 quart slow cooker. Pour sauce over pork.
  3. Cook on low 8 to 10 hours, until pork shreds easily with a fork.
  4. For the slaw, toss 4 cups shredded cabbage, 1/4 cup apple cider vinegar, 1 teaspoon granulated sugar, 1/4 teaspoon salt, and 1/4 teaspoon black pepper together in a mixing bowl.
  5. Shred pork and serve on corn tortillas with cabbage slaw, sliced red onions, and freshly chopped cilantro.
