Slow Cooker Gammon Shank

  • Slow cooker

Gammon Shank Ingredients:

  • 1 kg gammon shank
  • 1 onion small
  • 2 celery sticks
  • 4 carrot medium
  • 4 apple medium
  • 1 apple cider canned
  • 1 Tsp garlic powder
  • 1 Tbsp thyme
  • 1 Tbsp rosemary
  • 1 Tbsp parsley
  • salt
  • black pepper
  • 1 500 ml White beans drained, canned

Instructions

  1. Prep your fruit and vegetables. Peel and dice your onion, carrots, and apples. Then clean and dice your celery.
  2. Load your gammon shank into the slow cooker and pour over apple cider.
  3. Load the fruit and veggies into the gaps and season with salt, pepper and your dried herbs and garlic.
  4. Slow cook for 5 hours, remove the gammon shank and allow to cool a little so that its not too hot to handle. Then shred with your hands.
  5. Reduce the liquid by half in your slow cooker. This excess liquid can then be stock for another day and then add back in your shredded gammon. Stir in beans and then allow to slow cook for another 30 minutes to allow the beans to warm through before serving.

Notes

  • Swaps. You can use any beans. Though white beans that have been drained work best. Also, if you don’t want to use cider you can swap it for apple juice.
