Slow Cooker Honey Mustard Chicken
Description
This recipe begins by browning chicken thighs in butter to develop flavor and color. A sauce combining chicken stock, honey, Dijon mustard, crushed garlic, and sea salt is mixed and poured over the chicken in a slow cooker. Cooking on high for three hours yields tender, juicy meat infused with the sweet tangy sauce.
After slow cooking, crème fraîche is gently stirred in to add creaminess without breaking the chicken pieces. A corn starch slurry is incorporated to thicken the sauce to a pleasing consistency. The dish is best served with mashed potatoes to balance the flavorful sauce and provide a comforting meal.
Fresh herbs like chives or coriander can complement the dish. Optionally, a sprinkle of red chili flakes adds a mild heat. The chicken can be served whole or shredded and mixed into the sauce. The sauce thickening is optional based on desired texture.
Ingredients
- 1 kg chicken thighs boneless and skinless
- 1 tablespoon butter
- 150 ml chicken stock
- 5 tablespoon honey
- 4 tablespoon Dijon mustard
- 2 garlic crushed, clove
- 1 pinch salt sea salt
- 1 pinch black pepper ground
- 6 tablespoon crème fraîche
- 4 tablespoon corn starch aka cornflour
Instructions
- Put 1 tablespoon Butter in a large pan and once melted, add 1 kg Chicken thighs. Brown on both sides.
- Meanwhile, in a large bowl, mix together 150 ml Chicken stock, 5 tablespoon Honey, 2 Garlic clove, 4 tablespoon Dijon mustard and 1 pinch Sea salt.
- Put the chicken in the slow cooker and pour the honey and mustard sauce over the chicken. Cook on high for 3 hours.
- Once cooked, add 6 tablespoon Creme fraiche and carefully stir, so you don't break up the chicken.
- To thicken the sauce, take a ladle of liquid out and put in a cup with 4 tablespoon Cornflour (corn starch) and mix well. Add the mixture back to the slow cooker and stir.
- Serve with mashed potatoes.
Notes
- Add quick cook lentils at the start for extra protein.
- Fresh chives or coriander can be added as garnish for herbaceous notes.
- Serve chicken whole or shredded mixed into the sauce per preference.
- Sprinkle red chili flakes for added spice if desired.
- Thickening the sauce with corn starch is optional but helps avoid a runny consistency.
