Slow Cooker Hunters Chicken
Description
Slow Cooker Hunters Chicken combines seasoned boneless, skinless chicken thighs and vegetables like leeks, garlic, tomato, and cremini mushrooms in a slow cooker with chicken broth, salsa, and dried herbs including basil and oregano. Coating the chicken in tapioca starch before cooking adds a slight thickening effect to the sauce. The ingredients are gently mixed together to coat the chicken pieces, which then cook on low heat for 5-6 hours.
The result is tender chicken that retains moisture from the thighs releasing juices during cooking, creating a sauce enriched with the combined savoriness of the herbs, garlic, and vegetables. The slow cooking allows flavors to meld gradually without drying out the meat. The texture is soft and succulent while the sauce complements the chicken with a subtle but hearty taste.
This dish can be served on its own, with rice, pasta, or vegetables. Leftovers keep well in the refrigerator for 3-4 days. When using in salads, drain excess liquid. For other dishes, keep the sauce for flavor. Thighs can be substituted with chicken breasts, though cooking times may vary. The recipe can be modified based on available ingredients without risk of failure due to the forgiving slow cooker technique.
Ingredients
- 6 chicken thighs boneless, skinless
- 1.5 tbs tapioca starch
- ⅓ cup leek sliced
- 3 cloves garlic smashed
- 1 tomato chopped
- 8 cremini mushrooms quartered
- ½ cup chicken broth
- 1 teaspoon salt sea salt
- 1 teaspoon basil dried
- 1 teaspoon oregano dried
- ¼ cup salsa
Instructions
- Combine the chicken thighs and the tapioca powder in a plastic baggie and toss. Set aside.
- Add all the ingredients into a 7-quart slow cooker and mix lightly.
- Add in the chicken and turn each piece once so that it’s coated.
- Cook on low for 5-6 hours.
Notes
- Chicken breasts can substitute thighs, but adjust cooking time accordingly.
- The dish can cook longer on low without drying out because thighs release juices.
- Store leftovers in an airtight container for 3-4 days.
- If using the chicken for a salad, remove excess liquid before storage; keep sauce with chicken if incorporating into other dishes.
- Ingredients can be swapped based on availability without affecting success.
