Slow Cooker Indonesian Shredded Barbecue Chicken

Throw everything in the slow cooker and your work is done. The magic comes next as the chicken and sauce are melded together and the result is super tender, crazy delicious, barbecue chicken!

Ingredients

  • 2 ½ pounds skinless boneless chicken thighs
  • kosher salt
  • black pepper freshly ground
  • For the sauce:
  • ¾ cup honey
  • ½ cup ketchup good quality
  • ½ cup soy sauce low sodium
  • 2 tablespoons hoisin sauce
  • 3 tablespoon ginger finely chopped, fresh
  • 2 tablespoon lemongrass finely chopped, fresh
  • 1-2 teaspoons sriracha chili sauce

Instructions

  1. Sprinkle chicken lightly with kosher salt and freshly ground black pepper. Place in KitchenAid your slow cooker.
  2. In a bowl, mix the honey, catsup, soy sauce, hoisin sauce, ginger, lemongrass and Sriracha sauce. Stir well to combine.
  3. Pour sauce over the chicken. Cover, and cook 2 to 3 hours on High or 4-5 hours on Low or until chicken is tender and shreds easily with a fork.
  4. Remove chicken from sauce and set aside to cool.
  5. Increase the temperature on your slow cooker to high and cook for 10 minutes or until sauce is beginning to thicken. You can also transfer the sauce to a medium-size saucepan and simmer it on the stovetop.
  6. Shred chicken with two forks into bite size pieces. Return to the slow cooker and stir to coat with sauce.
  7. Serve on buns, over rice, in wraps, paninis or on pizza.
