Slow Cooker Korean Beef
Description
This recipe combines a mixture of beef broth, reduced sodium soy sauce, brown sugar, minced garlic, sesame oil, rice wine vinegar, freshly grated ginger, Sriracha, onion powder, and white pepper to create a richly flavored marinade and sauce base. Cubed boneless beef chuck roast is coated in this mixture and cooked in a slow cooker over low or high heat for several hours until the beef becomes tender.
After cooking, cornstarch mixed with water is stirred in to thicken the sauce, which then simmers in the slow cooker for an additional half hour. This step enhances the sauce's texture, clinging to the beef pieces. The final dish is garnished with thinly sliced green onions and sesame seeds, adding a fresh, nutty finish.
Slow Cooker Korean Beef serves as a comforting, hands-off meal ideal for busy days. It's well suited to be served over steamed rice or alongside vegetables to balance its savory, slightly spicy flavors.
