Slow Cooker Lazy Enchiladas (with Tiktok)

Report
Slow Cooker Lazy Enchiladas are made by layering frozen chicken taquitos with enchilada sauce and cheese in a crock pot, then slow cooking to meld flavors and melt the cheese. This hands-off approach yields a casserole-style dish with familiar enchilada flavors and textures without assembling individual tortillas and fillings.

Description

This recipe places frozen chicken taquitos in a slow cooker, covers them with red enchilada sauce, and sprinkles shredded Colby jack cheese on top. Cooking on low for three hours heats the taquitos through and softens them slightly. Adding additional cheese and cooking five more minutes melts the cheese over the top, creating a gooey, saucy layer that ties the dish together.

The result is an easy alternative to traditional enchiladas, preserving the flavor of the taquitos but serving in a layered, less fussy format. Variations mentioned include substituting steak or cheese taquitos and using green enchilada sauce instead of red. The dish is served warm and works well with typical enchilada toppings.

Leftovers can be refrigerated in an airtight container for up to five days, making this convenient for meal prep or casual entertaining.
