Ingredients

  • 1 onion chopped, small
  • 1 pound potato washed, peeled, and chopped into large chunks, yellow
  • 8 ounces ham steak cubed
  • 32 ounces vegetable broth low sodium
  • ½ teaspoon black pepper
  • 2 cups half-and-half 16 ounces, or whole milk
  • ¾ cup cheese shredded
  • 6 lices Bacon cooked and chopped
  • 4 green onions chopped
  • 2 tablespoons chives chopped
  • sour cream optional

Instructions

  1. In the bowl of a large (5qt) slow cooker, place onion, potatoes, ham, broth, pepper. Cook on low for 6 hours.
  2. Once the potatoes are tender and the soup thickened, stir in the half and half, and cook for another 10 minutes.
  3. Ladle soup into bowls, top with shredded cheese, chopped bacon, green onions, and sour cream if using.
