Slow Cooker Meatballs in Tomato Sauce

Super tasty beef meatballs in rich tomato sauce – let your slow cooker do most of the work! Serve with spaghetti and plenty of freshly grated Parmesan.

Ingredients

  • 450 g Lean beef mince 5% fat, 1 pound
  • 1 yellow onion peeled
  • 2 garlic peeled, large cloves
  • 3 tbsp panko breadcrumbs use wholemeal breadcrumbs for SW version
  • 2 tbsp Parmesan Cheese ready grated is fine, grated
  • 1 egg large
  • 1 tsp oregano dried
  • 1 tsp onion granules
  • ½ tsp salt

Tomato Sauce

  • 400 g Italian plum tomatoes 14 oz, in sauce
  • 60 ml red wine or beef stock, 1/4 cup
  • 1 onion peeled, large
  • 2 garlic peeled, large cloves
  • basil leaves roughly torn, fresh, small bunch
  • 1 tbsp olive oil leave out for SW version
  • 2 tsp sugar
  • ½ tsp ground cinnamon
  • ¼ tsp celery salt optional
  • Worcestershire sauce dash
  • pinch cloves
  • salt freshly ground, to season
  • black pepper freshly ground, to season
  • Parmesan Cheese freshly grated, to serve

Instructions

  1. Blitz the onion and garlic in a food processor or mini chopper until finely minced.
  2. Put the all the ingredients for the meatballs in a large bowl and add the onion and garlic. Mix everything together thoroughly with your hands and then form small, even sized meatballs. Set aside.
  3. Blitz the tomatoes, onion and garlic in a food processor or blender.
  4. Add the oil into the slow cooker container and then pour in the tomato sauce. Add the wine, sugar, cinnamon, Worcestershire sauce and cloves. Mix everything together with a spoon and season with salt and pepper.
  5. Nestle the meatballs in the sauce, cover and cook for 3 hours on high or 5-6 hours on low. Turn the meatballs over halfway through the cooking.
  6. When the meatballs are ready, check the seasoning and add the basil leaves.
  7. Serve with spaghetti or your choice of pasta and sprinkle with plenty of freshly grated Parmesan.
