Slow Cooker Minestrone Soup with Tortellini

Slow cooker minestrone soup with tortellini is a hearty dish your family will love. Packed with veggies, protein, and noodles, it's a feast!

Ingredients

  • 1 pound Italian sausage cooked ground
  • 2 cans (15 oz) crushed tomatoes
  • cup sun-dried tomatoes in olive oil
  • 8 medium potato red
  • 3 large carrot
  • 5 celery stalks
  • ½ yellow onion
  • 5 cloves garlic
  • 1 tablespoon Italian seasoning
  • 2 bay leaf
  • 4 cups vegetable stock
  • 2 cups water
  • 1 can (15 oz) Kidney Beans dark red
  • 1 can (15 oz) great northern beans
  • 1 cups zucchini sliced
  • 2 cups tortellini
  • 1 cup green beans frozen
  • 2 cups spinach
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Parmesan Cheese fresh, to garnish

Instructions

  1. Get out and measure all of your ingredients.
  2. Get out your skillet and cook your ground sausage or whichever ground meat you're using until no longer pink. Set aside.
  3. Dice carrots, celery, onion, potatoes and zucchini. Set aside.
  4. Lightly grease the bottom of a 6-quart or larger slow cooker.
  5. Add the ground sausage.

  7. sun dried tomatoes, carrots, celery,
  8. potatoes, onion, garlic, seasonings and bay leaves into the slow cooker.
  9. Add vegetable stock and water and stir lightly.
  10. Cover the slow cooker and cook on high for 3-4 hours or on low for 6-8 hours.
  11. After cook time is complete, remove lid and stir.
  12. Add kidney beans, great northern beans, zucchini, green beans and spinach. Cook on high for 30 minutes.
  13. While the soup is cooking, cook the tortellini according to package directions.
  14. Drain.
  15. When soup has completed cooking, you can prepare your bowls.
  16. Place tortellini in the bottom of a soup bowl. You want to keep the pasta separate from the soup until serving so pasta doesn't ruin. Use a ladle to pour soup over tortellini.
  17. As big or as little a bowl as you would like.
  18. Garnish with fresh parmesan cheese over top.
  19. Enjoy every bite!
  20. Store soup and pasta separately until needed.

Notes
