Slow Cooker Mississippi Chicken Thighs

These slow cooker Mississippi chicken thighs are fall-off the bone, easy to prep, and incredibly flavorful. This is a family favorite tried and true crockpot recipe. It's super simple, involves 4 ingredients and comes out perfect every time!

  • 1 pound chicken thighs 4-6 thighs
  • 1 ounce Ranch dressing mix packet
  • 1 ounce Lipton Onion Soup and Dip Mix packet
  • 1 ounce Pepperoncini peppers save ½ cup of juices, discard the rest OR use ½ cup water if you prefer less heat, jar

Instructions

  1. Add the chicken to the slow cooker.
  2. Sprinkle over the ranch seasoning mix, onion soup mix, the pepperoncinis and 1/2 cup of juices from the jar. If you prefer less heat, skip the pepperoncini juice and add 1/2 cup water instead. 
  3. Cover and cook on low for 7 hours or on high for 4 hours.
  4. Serve the chicken thighs whole or shred them all. Serve with loaded mashed cauliflower, rice or potatoes.
