  • ½ teaspoon Cajun Seasoning
  • ½ teaspoon onion powder
  • 2 tablespoons Dijon mustard
  • 8-10 lices Bacon

Instructions

  1. Mix the brown sugar, garlic salt, cajun seasoning, and onion powder in a small bowl.
  2. Spread the mustard over the pork and wrap the bacon around the pork.
  3. Place the pork loin bacon seam down into your slow cooker.
  4. Sprinkle the brown sugar mixture all over the roast.
  5. Cover and cook on low for 4-5 hours.
  6. Once the pork is cooked through, carefully transfer it to a lined baking sheet and broil for a few minutes, just until the bacon crisps up.
  7. Let it rest for 5 minutes before slicing and serving.
