This Crockpot Pork Roast and Vegetables is a fix it and forget it meal that always turns out great. The pork roast always comes out tender and juicy.

Ingredients
- 3-4 pounds pork roast
- 2 Tablespoons oil
- 6 potatoes quartered
- 2 cups baby carrots
- 1 onion cut in chunks
- 10 ounces cream of mushroom soup
- 1 envelope dry onion soup mix
- salt and pepper

Instructions
- In a large fry pan or skillet, brown sides of the pork roast in oil.
- Place roast in crockpot.
- Mix cream of mushroom soup and onion soup mix in a medium-sized bowl. Add vegetables and mix well.
- Pour mixture over roast in crockpot.
- Cook on high for 4 hours, or on low for 8 hours.

- If you have leftovers, then this slow cooker meal is perfect to warm up again and again throughout the week! Simply place the roast in an airtight container dish to sit in the refrigerator for five to seven days. When ready to reheat, you can place in the microwave or cook in the oven until warm. You can even make pork sandwiches for the next day!
