Slow Cooker Pot Roast
Description
This pot roast recipe uses a 3-pound beef roast placed in a slow cooker and topped with cream of mushroom soup and onion soup mix, which combine to create a flavorful and moist cooking environment. The slow cooking process, on low or high settings, gradually tenderizes the roast, infusing it with savory mushroom and onion flavor.
Optionally, carrots and potatoes can be added halfway through cooking, contributing additional texture and absorbing the savory juices. Adjusting the amount of mushroom soup enhances gravy volume and thickness, and a small amount of water can be added to maintain moisture when including vegetables.
This dish is practical for a hands-off meal that produces tender beef and rich sauce ideal for family dinners. Serve sliced or shredded with the cooked vegetables and gravy spooned over.
For best results, allow the roast to cook fully until tender and ensure vegetables are pierced easily indicating doneness.
Ingredients
- 3 lb beef roast *I use round eye, but rump roast is great too!
- 1 can cream of mushroom soup
- 1 packet onion soup mix Lipton brand
- carrot optional
- potato optional
Instructions
- Place beef roast into slow cooker.
- Pour cream of mushroom soup on top of beef roast.
- Sprinkle soup mix evenly on top of roast.
- Place lid on slow cooker and cook on low for about 6-8 hours, or high for about 4 hours.
- *If adding potatoes and carrots, add those into the slow cooker halfway through and pour about 1/4 cup water onto bottom of slow cooker. Or increase to 2 cans cream of mushroom soup and omit any water
Notes
- When adding potatoes and carrots, increase cream of mushroom soup to 2 cans to create more gravy.
- Add vegetables halfway through cooking and pour about 1/4 cup water in the slow cooker bottom to maintain moisture if used.
