													Pulled pork tenderloin is covered in the WORLD'S BEST coffee rosemary rub, then slow cooked in a crock pot. It's delicious as a sandwich or stuffed in a roasted sweet potato!

                                Ingredients
- 1 pound pork tenderloin
 - 2 tablespoons coffee rub click link for the recipe
 - ⅓ cup chicken broth
 - ⅓ cup balsamic vinegar
 - 1 tablespoon honey
 - 2 garlic cloves crushed
 - 4 sweet potatoes medium-size
 
Instructions
- Rub the pork tenderloin all over with the coffee rub.
 - Place the pork in a slow cooker.
 - In a medium bowl, whisk the chicken broth, balsamic vinegar, honey and garlic together.
 - Pour the mixture over the pork.
 - Cook on low for 6-8 hours or on high for 4 hours.
 - About an hour before serving the pork, place the sweet potatoes in the oven set to 350°F for 45 minutes, or until soft to the touch.
 - Remove from the oven and cool 10-15 minutes.
 - While the potatoes are cooling, use two forks or meat claws to pull the pork apart in the crock pot.
 - Slice open the potatoes and fill them with the pulled pork.
 
Notes
- Instead of serving the pulled pork in sweet potatoes, you can also serve the pork as a sandwich on toasted hamburger buns.
