Slow Cooker Pumpkin Pie Pudding

Slow Cooker Pumpkin Pie Pudding cooks pumpkin puree blended with evaporated milk, brown sugar, eggs, and warming spices in a slow cooker until set. The addition of Bisquick mix gives the pudding a thick, custardy texture similar to pumpkin pie filling but made hands-off in a slow cooker. This recipe provides an easy way to enjoy pumpkin pie flavors without an oven.

Description

Slow Cooker Pumpkin Pie Pudding combines canned pumpkin puree, evaporated milk, brown sugar, eggs, vanilla extract, melted butter, and traditional pumpkin pie spices such as cinnamon, nutmeg, cloves, and ginger. Biscuit mix (Bisquick) is stirred in to help the pudding set with a soft, cake-like consistency as it cooks slowly on low heat for 4 to 6 hours.

The slow cooking process gently thickens the mixture, developing the familiar sweet and spiced pumpkin pie flavors with a custard texture. Because it cooks slowly without the direct heat of an oven, it requires monitoring against overcooking or high heat.

The pudding is traditionally served warm with toppings like whipped cream or vanilla ice cream and an extra sprinkle of cinnamon and brown sugar. It offers a convenient alternative to baked pumpkin pie, suitable for those looking for a straightforward slow cooker dessert.
