  • 2 pounds chicken breast
  • 1 ranch seasoning or two tablespoons homemade ranch seasoning, 1 teaspoon reserved, Hidden Valley brand packet
  • ½ cup chicken broth
  • 8 ounces cream cheese softened

Instructions

  1. Pour the chicken broth into the crock pot. Lay the chicken breast on top, then top with the ranch seasoning (reserve 1 teaspoon.)  Cover and cook on high for 2.5 hours.
  2. At the end of the cook time, remove the chicken and shred it.
  3. Place the shredded chicken the reserved ranch seasoning, and cream cheese back into the crock pot and stir until everything is evenly combined.
  4. Serve on top of rice, in pita pockets, tacos, stuffed in baked potatoes, or any of the other ideas mentioned in this post!

Notes

  • Store leftovers in airtight containers: refrigerate 3-4 days or freeze up to one month.
  • Reheat in microwave using 30-second intervals to retain moisture.
  • Use store-bought or homemade ranch seasoning; homemade is suitable for gluten/dairy-free needs.
