Slow Cooker Roast Beef
Description
This recipe calls for a beef roasting joint browned optionally on all sides with olive oil and seasoning to develop color and flavor before slow cooking. Diced potatoes, carrots, and onions are arranged around the meat in the cooker, seasoned with half the herbs and seasoning, and topped with frozen beef stock cubes and tomato puree. Additional dried thyme and bouquet garni are added over the meat along with remaining seasonings.
The slow cooker is sealed and set to cook on high for approximately 4 hours or medium roast done in about 3 hours. The vegetables soften and absorb the rich broth released during cooking, while the beef becomes tender and juicy. Stirring the vegetables halfway through cooking helps mix flavors and prevents sticking.
This roast beef meal is practical for hands-off cooking and produces a comforting dinner of meat and vegetables in one pot. It can be paired with gravy or served as is. The included stock cubes add a boost of flavor without extra preparation.
Using frozen homemade beef stock cubes facilitates quick preparation and reduces waste, as they can be added directly to the slow cooker and melt during cooking.
Ingredients
- 1.5 kg beef roasting joint
- 1 onion medium
- 5 potato medium
- 3 carrot medium
- 3 beef stock cubes frozen, small, for Instant Pot
- 1 Tbsp tomato puree
- 1 Tbsp thyme dried
- 2 Tsp bouquet garni
- salt

- 1 Tbsp extra virgin olive oil optional

Instructions
- Let’s cook beef in slow cooker. Optional – start by browning your beef roasting joint with olive oil and salt and pepper. Brown on all sides. Note we have a slow cooker that lets you use the cooking pot on the stove. (we have this slow cooker)
- Next peel your potatoes, carrots, and onion. Dice your carrots and onion and then chop your potatoes into the size of roast potatoes.
- Decorate the potatoes, carrots, and onion around the beef joint. Then season the potatoes, carrots, and onion, with half the seasonings and place the beef stock cubes (still frozen) over them. Then add the tomato puree over the beef joint (and the remaining seasonings) smothering the tomato puree over the top.
- Then place the lid on the slow cooker, and slow cook on high for 4 hours or for a more medium roast beef opt for 3 hours. Halfway through mix with a silicone spoon the potatoes and carrots and onions to mix them into the defrosted stock and to stop them from sticking.
- When the slow cooker is done, remove the roast beef and allow it to rest before serving with the potatoes and carrots.
