Description

The recipe combines ground beef with pork rind crumbs, garlic, seasoning, Worcestershire sauce, and egg for binding, then forms and sears patties to develop flavor. These patties are placed in a slow cooker.

The gravy is made by sautéing onions, mushrooms, and garlic in tallow or butter substitute, then simmering with beef broth and thickening with xanthan gum to create a glossy, cohesive sauce without gluten-containing thickeners. The hot gravy is poured over the patties, and the dish cooks slowly for several hours to tenderize meat and meld flavors.

For the patties:

  • 2 lb. ground beef
  • 1 C. pork rind crumbs
  • 2 tsp. Worcestershire sauce
  • 2 tsp. garlic minced
  • 1 egg large
  • salt to taste
  • black pepper to taste
  • 2 Tbsp. olive oil

For the gravy:

  • ½ onion sliced
  • 6 oz. mushroom sliced
  • 2 Tbsp. tallow or butter
  • 2 C. beef broth
  • 2 tsp. garlic minced
  • 1 tsp. xanthan gum
  • salt to taste
  • black pepper to taste

Instructions

  1. Add the ground beef, pork rind crumbs, Worcestershire sauce, garlic, egg and salt and pepper to taste to a large mixing bowl. Knead with your hands until the mixture is blended well.
  2. Form the mixture into 6 evenly sized patties.
  3. Heat the oil in a skillet over medium high heat.
  4. Place the patties into the skillet, and sear evenly on both sides. Remove, and place into the bottom of the Crockpot.
  5. Melt the butter in a skillet, and add in the onions and mushrooms. Saute until softened.
  6. Stir in the garlic, and saute for 30 seconds.
  7. Pour in the beef broth, and simmer for 5 minutes.
  8. Lightly sprinkle the xanthan gum into the skillet, whisking as you do.
  9. Pour the gravy mixture over the patties in the Crockpot.
  10. Cover and cook on high for 3-4 hours.
