Slow Cooker Sesame Beef
Description
This recipe starts with flank steak cut into thin 2-inch pieces to ensure tenderness after slow cooking. The beef is combined with chopped white and sliced green onions plus thinly sliced red pepper for color and sweetness. The sauce includes sesame oil for a nutty base, minced garlic for aroma, soy sauce for saltiness, brown sugar for sweetness, rice vinegar for acidity, water to create the cooking liquid, and crushed red pepper for mild heat.
After placing beef and vegetables in a greased slow cooker and pouring in the sauce (excluding the slurry ingredients), the mixture cooks on high for 2-3 hours or low for 4-5 hours. Near the end, a slurry of cold water and cornstarch is whisked and added to thicken the sauce, cooking further to develop a glossy finish. Sesame seeds sprinkled on top add a subtle crunch and accentuate the sesame flavor.
The completed sesame beef pairs well with freshly cooked white rice or homemade fried rice to absorb the flavorful sauce. The dish offers tender, saucy beef with a balance of sweet, savory, and mildly spicy tastes. Using thin beef slices and slow cooking ensure the meat is soft and infused with sauce flavors.
Ingredients
- 16 ounces flank steak chopped into 2-inch pieces, thin
- ½ white onion chopped
- ¼ cup green onion sliced
Sauce
- 3 tablespoons sesame oil
- 1 tablespoon garlic minced
- 1 red pepper seeded and thinly sliced
- 3 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- ½ cup water
- ½ teaspoon crushed red pepper
- ¼ cup water cold
- 1 tablespoon corn starch
- sesame seeds for garnish
Instructions
- Place beef, onions (green and white), and chopped red peppers in a greased slow cooker.
- In a medium bowl whisk together all sauce ingredients (do not include the 1/4 cup cold water, corn starch, or sesame seeds). Pour sauce into the slow cooker and stir to combine. Cover and cook 2-3 hours on high or 4-5 hours on low.
- About 30 minutes before serving, whisk together remaining cold water and corn starch. Add corn starch slurry to the slow cooker and stir. Cover and cook on high for another 30 minutes or so. Stir just before serving. Serve with cooked white or fried rice and sprinkle with sesame seeds.
Notes
- Use thinly sliced flank steak or similar thin-cut beef for the most tender results after slow cooking.
- Serve with white or fried rice to complement and absorb the savory sesame sauce.
- Ensure the cornstarch slurry is well mixed before adding to avoid lumps in the sauce.
