Kitchen Gadgets:

  • Slow cooker

Slimming World Pasta Bake Ingredients:

  • 200 g mushrooms
  • 1 bell pepper large
  • 3 celery sticks
  • 1 courgette zucchini, medium
  • 480 ml canned tomatoes
  • 250 g dried pasta
  • 250 ml vegetable stock
  • 1 Tbsp basil
  • 1 Tbsp oregano
  • salt
  • black pepper

For Later:

  • 400 ml vegetable stock
  • 6 tomato medium

Instructions

  1. Wash your vegetables and slice and dice and load into the slow cooker.
  2. And in pasta, tinned tomatoes, stock, and seasonings. Give it a good stir, preference with your hands because it does a better job.
  3. Place the lid on the slow cooker and cook for three hours. After three hours add in sliced tomatoes and extra stock. Stir and allow to cook for a further hour.
  4. After the four hours is up, give your pasta bake a stir, adjust seasonings if necessary and then serve.

Notes

  • Peppers. I love the colours of a Mediterranean pasta bake and will add some green, some red and some yellow pepper. You can do the same or just buy one large red one.
  • Extras. You need the extra stock because it stops the pasta from drying out. I also add the tomatoes at this point to stop them from overcooking.
  • Tomatoes. I prefer to use tinned tomatoes but only had in tomato sauce and used that instead. You can use either in this recipe.
