Slow Cooker Sloppy Joes

Slow Cooker Sloppy Joes combine ground beef or a beef-turkey mix with fire-roasted diced tomatoes, chopped onions, celery, and garlic in a rich sauce made with chili sauce, ketchup, brown sugar, and an array of spices. Cooking slowly on low heat deepens the flavors, resulting in a hearty, savory filling. The texture is moist and chunky, making it ideal for scooping onto soft buns or even thick potato chips for a casual meal.

Description

The Slow Cooker Sloppy Joes recipe uses a blend of ground meats and aromatic vegetables cooked slowly to blend savory, sweet, and tangy flavors. The fire-roasted tomatoes add a subtle smoky depth, while brown sugar and ketchup balance acidity with sweetness. Spices like cumin, chili powder, and paprika provide warmth without overwhelming heat. Cooking in a slow cooker allows the flavors to meld and the beef to become tender and juicy.

The finished sloppy joes offer a thick, saucy texture that holds well on sandwich buns or can be enjoyed without bread using sturdy potato chips as scoops. This approach makes for an adaptable meal suitable for casual gatherings or quick family dinners.

Serving suggestions include soft buns of various sizes and a variety of pickles such as dill spears, sweet refrigerator pickles, or pickled red onions to add acidity and crunch. Ripple potato chips provide a contrasting texture and a hands-on experience. The recipe’s step of browning meat and onions prior to slow cooking helps reduce excess fat and develop richer flavor.

Ingredients

Servings
  • 3 pounds ground beef I also do a combination of ground beef and turkey, usually 2 lbs. beef & 1 lb. turkey, lean
  • 1 yellow onion finely chopped, large
  • cups celery finely chopped
  • 6 garlic minced, large cloves
  • 1 can 14.5 ounces fire roasted diced tomatoes
  • 1 cup chili sauce
  • ½ cup ketchup
  • cup brown sugar packed
  • 2 tablespoons prepared mustard
  • 1 tablespoon Worcestershire sauce
  • ½ tablespoon mustard powder dry
  • 1 tablespoon chili powder medium
  • 1 tablespoon cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper or more to taste, freshly ground
  • salt to taste, additional

Instructions

  1. In a skillet over medium-high heat, brown ground beef and onion together until beef is cooked, breaking up beef with a spatula. Drain off fat and transfer to a slow cooker. Or just use a multi-cooker - brown the beef and onion right in the cooker, and drain off fat.
  2. Add all remaining ingredients to slow cooker and stir well. Cover and cook on low for 4 to 6 hours. The longer cook time will give a deeper flavor.

Notes

  • Use soft buns or dinner rolls to hold the juicy filling without falling apart.
  • Include pickles like dill spears, sweet pickles, or pickled red onions for acidity and texture contrast.
  • Ripple potato chips are a sturdy alternative for serving the sloppy joe mixture without bread.
  • Browning the meat and onions before slow cooking reduces fat and intensifies flavor.
