Sweet Salsa Pulled Pork

  • 3-5 pound pork butt roast boneless
  • 2 tablespoons garlic about 6 cloves, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 (16 ounce jar) salsa
  • 1 cup brown sugar
  • 1 tablespoon cumin optional, ground

For Serving

  • 12 (6-inch) flour tortillas or corn
  • 1/2 cup cilantro chopped, fresh
  • 2 medium Roma tomato diced
  • 1/2 medium red onion diced
  • 1/2 cup queso fresco crumbled

Instructions

  1. Place a 3-5 pound boneless pork butt roast into a 6-quart slow cooker.
  2. Rub the pork with 2 tablespoons minced garlic, 2 teaspoons salt, and 1 teaspoon black pepper.
  3. Place the lid on the slow cooker and cook on low for 6 hours.
  4. Remove at least half of the grease and juices.
  5. In a small bowl, stir a 1 (16 ounce jar) salsa with 1 cup brown sugar and 1 tablespoon ground cumin until combined. Pour over the pork and return the lid to the slow cooker. Cook for another 1-2 hours until the pork shreds easily with a fork.
  6. Serve on warmed tortillas and top with desired toppings.
