Small Batch Brownies
Description
This recipe is designed for a small batch of brownies baked in a 9x5 inch bread pan lined with parchment for easy removal. The batter is made by whisking together sugar, flour, natural unsweetened cocoa powder, baking powder, and salt, then stirring in melted butter. Adding beaten egg and vanilla extract and mixing well encourages a shiny, crackled surface typical of classic brownies.
Semisweet chocolate chips are folded into the batter for pockets of melted chocolate throughout, with optional extra chips scattered on top before baking. The brownies bake at 350°F for 23-25 minutes until a toothpick inserted comes out clean or with fudgy crumbs, resulting in moist, chewy brownies with a soft crumb.
These brownies are suitable as a quick dessert or snack for 2-4 people and can be cooled cut and served simply. The texture balances fudgy richness with a tender bite rather than cakey crumb.
Leftovers should be stored in an airtight container at room temperature and consumed within three days for optimal freshness.
Ingredients
- ⅔ cup granulated sugar
- ⅓ cup all-purpose flour
- ¼ cup unsweetened cocoa powder natural
- ⅛ teaspoon baking powder
- ¼ teaspoon salt
- 4 Tablespoons butter melted, unsalted
- 1 egg lightly beaten, large
- ½ teaspoon vanilla extract
- ¼ cup semisweet chocolate chips plus additional for topping, if desired.
Instructions
- Preheat oven to 350F (175C) and line a 9x5 bread pan with a sling of parchment paper (this will make removing the brownies and cutting them easier). Set aside.
- In a medium-sized mixing bowl, whisk together sugar, flour, cocoa powder, baking powder, and salt.
- Stir in melted butter (mixture will be stiff and dry) then add egg and vanilla extract. Whisk vigorously to combine (the more mixing you do, the more likely you are to have those shiny, crackly brownie tops!).
- Stir in chocolate chips and spread batter into prepared pan. Scatter additional chocolate chips on top, if desired.
- Transfer to center rack of 350F (175C) oven and bake for 23-25 minutes or until a toothpick comes out clean or with fudgy crumbs (not wet batter).
- Allow to cool before lifting brownies from pan and cutting. Enjoy!
Notes
- If you have leftovers, store brownies in an airtight container at room temperature and consume within three days.
