If you want to try something typically Czech and really easy to make, go for a Smaženka bread crumb omelet! It is a quick and delicious warm snack that is ready in a flash.

Ingredients
- 1 slice rye bread
- 1 Tablespoon breadcrumbs
- 1 Tablespoon cold water
- 1 egg
- ¼ teaspoon salt
- sunflower oil to fry omelet (or lard / canola)
Topping:
- 1 dill pickles
- ¼ onion peeled and cut into circles
- 1 teaspoon yellow mustard
- green parsley

Instructions
- Before you start cooking: Peel ¼ onion and cut it into circles. Slice 1 dill pickles lengthwise.
- Open 1 egg in a shallow bowl, add 1 Tablespoon cold water, and 1 Tablespoon breadcrumbs. Season with ¼ teaspoon salt. Beat until frothy.
- In a non-stick pan, melt sunflower oil over medium heat. Pour in the egg mixture evenly in the pan and fry until the edges are golden. Flip and fry on the other side. It is quick, if the oil is well heated, each side is in max. 1 minute done.
- Spread 1 teaspoon yellow mustard on the upper side of 1 slice rye bread. Place the omelette over the bread, fold it in the middle.
- Topping: Also, spread some mustard over omelette, then garnish with onion circles and pickles. Optional, add green parsley for a final touch.
- Serve warm or cold.
Notes
- The basic recipe makes 1 portion.
- Smaženka tastes best warm, eaten immediately after frying. However, you can enjoy this omelet cold as well. You can find and buy this delicacy in many Czech buffets.
- This omelet gets a better texture from the addition of bread crumbs, it is denser and more filling, but still enough soft and fluffy.
