Smoked Mozzarella Fonduta

Smoked Mozzarella Fonduta is a rich Italian cheese dip blending Italian cheese blend, Parmesan, and Romano cheeses with sour cream and warming spices. Baked until bubbly and lightly browned, it offers a creamy, melted texture reminiscent of a fondue, finished with fresh diced Roma tomato and optional parsley. This cheese fonduta is ideal for serving warm with sliced Italian bread, making it a satisfying appetizer or snack that highlights the savory smokiness and herb seasoning in the cheese mixture.

Description

Smoked Mozzarella Fonduta combines a generous amount of an Italian cheese blend with Parmesan and Romano cheeses, mixed into sour cream flavored with thyme, red pepper flakes, and a dash of cayenne for a subtle hint of heat. The mixture is baked in a skillet or baking dish at high temperature until it melts into a creamy, bubbly, lightly browned cheese dip. The topping of diced Roma tomato and parsley adds a fresh texture contrast and brightens the rich, smoky, and slightly spicy cheese flavors.

The fonduta’s texture is creamy and smooth with a gentle melted stretch from the mozzarella. The blend of cheeses combined with herbs and spices creates a savory depth with a little heat from the red pepper and cayenne. It’s designed to be served warm with Italian bread slices for dipping, making it a comforting and shareable starter.

For best results, grating hard cheeses like Parmesan and Romano finely from blocks helps them blend smoothly. This dip serves about eight and is ideal to serve shortly after baking for optimal texture and flavor.

Ingredients

Servings
  • 1 cup sour cream
  • 1 teaspoon thyme if you have ground thyme, only use 1/2 teaspoon, dried leaves
  • 1/4 teaspoon red pepper flakes dried
  • dash cayenne pepper
  • 6 cups Italian cheese blend shredded
  • 6 tablespoons Parmesan Cheese blend
  • 6 tablespoons Roman cheese blend
  • 1/2 cup Roma tomato diced
  • 1 prig parsley optional

Instructions

  1. In a medium bowl, combine the first 6 ingredients. Mix well.
  2. Transfer to a 10" round skillet or 11x7" baking dish. Bake at 450 degrees for 10 minutes, or until the cheese is lightly browned and bubbly.
  3. Top with diced tomatoes and parsley, if desired.
  4. Serve while warm with sliced Italian bread.

Notes

  • Grate Parmesan and Romano cheeses finely using a microplane for smooth melting and texture.
  • Serve immediately while warm to enjoy the best creamy, melted consistency.
  • This recipe yields about 8 servings with approximately 1/8 of the dip per serving.
  • Adjust the amount of dried thyme (use less if ground) and peppers to taste based on your spice preference.
