Smoked Turkey Quesadilla Recipe

This easy lunchtime quesadilla features smoked turkey and sweet apples, along with creamy melted cheese.

Ingredients
- 4 whole wheat tortillas
- 8 teaspoons Stone ground mustard
- 6 ounces sliced havarti cheese
- 6 ounces sliced smoked turkey breast
- 1 ½ Gala apples cored and thinly sliced
- 1 cup arugula
Instructions
- Heat a medium-sized skillet over medium-high heat. Lay 1 whole wheat tortilla in the pan, and spread 2 teaspoons of the mustard over the tortilla.
- Top with ¼ of the cheese, turkey, apple and arugula.
- Fold over the other side of the tortilla to form a half-circle. Press down with a spatula as the cheese melts to seal the quesadilla.
- When the bottom is golden brown, flip the quesadilla and brown on the other side.
- Remove from the pan, cut into thirds and serve.
- Repeat with the remaining tortillas, mustard, cheese, turkey, apple & arugula.
