Smoky Baked Vegan Pasta Bake uses penne pasta mixed with a tomato and coconut cream-based sauce, combined with olives, spring onions, sun-dried tomatoes, and a smoky seasoning blend of oregano and smoked paprika. Half of the vegan cheese is stirred into the mixture while the remainder tops the bake before oven cooking.
Baked at 200°C (400°F) until golden and set, the dish offers a creamy, slightly tangy profile with hints of smoke from the smoked paprika. The texture balances the tender pasta with the melting vegan cheese and the slight firmness of olives and sun-dried tomatoes.

Ingredients
- 500 g penne pasta
- 200 g Violife Original grated cheese you can also buy the Original grated or the Original Block and grate it yourself, divided in half
- 100 g coconut cream
- 300 g tomato sauce
- 100 g olives
- 4 spring onions (scallions) chopped
- 1/4 cup tomatoes chopped, sun dried
- 1 tsp oregano
- ½ tsp smoked paprika
- olive oil
- salt
- black pepper ground
Instructions
- Cook pasta according to package instructions.
- Preheat oven to 200C / 400F / gas 6.
- Add all ingredients (but only half the cheese) to a large bowl and thoroughly combine.
- Lightly oil a baking tray and then add in the pasta mix.
- Sprinkle on the remaining cheese, spray the top with some olive oil spray.
- Bake in the oven for 25 mins. Remove, allow to cool for a couple of mins and serve.
Notes
- You can vary herbs by using Italian seasoning or fresh basil and thyme to customize the flavor.
- Adding vegetables such as chopped spinach, diced bell peppers, or sautéed mushrooms can enhance texture and nutrition.
- For more heat, include red chili flakes to the mixture.
