Smoky S'mores Root Beer Floats

Smoky S'mores Root Beer Floats combine melted milk chocolate, chocolate and vanilla ice cream, and root beer, accented with smoked sea salt. The addition of graham crackers and charred marshmallows echoes classic s'mores flavors in a creamy float. This recipe offers a playful dessert drink that brings together toasted and sweet elements in a fizzy, frothy treat.

Description

Smoky S'mores Root Beer Floats start by melting milk chocolate chips, which are drizzled around the rim of serving glasses to add a rich, chocolatey edge. The floats are layered with both chocolate and vanilla ice cream and a pinch of smoked sea salt to enhance the smoky notes. Root beer is poured over the ice cream just before serving to create a bubbly, creamy mixture. Crunchy graham cracker crumbs sprinkled on top contribute texture reminiscent of s'mores. The final touch is a charred or torched marshmallow for that authentic toasted flavor.

The float balances creamy, fizzy, sweet, and smoky elements for a unique twist on a classic treat. The root beer effervescence mingles with smooth ice creams, while the smoked salt and charred marshmallow add depth. This dessert beverage suits sharing or casual entertaining when a nostalgic yet different indulgence is desired.

To prepare the charred marshmallows safely without a bonfire, they can be torched with a kitchen torch, broiled carefully, or briefly melted in the microwave. Using smoked sea salt is key for the smoky flavor impact.

Ingredients

Servings
  • 1/3 cup milk chocolate chips melted
  • 1 cup chocolate ice cream
  • 1 cup vanilla ice cream
  • 2 root beer bottles
  • pinch smoked sea salt
  • 2 tablespoons graham crackers
  • 2 marshmallows charred or torched

Instructions

  1. To melt the chocolate chips, place them in a bowl and microwave in 30 second increments until melty. I like to take a spoon and drizzle this around the rim.
  2. Fill each glass with both chocolate and vanilla ice creams. Add a pinch of smoked sea salt into the glass. Pour the root beer over top just before serving. Sprinkle on the graham crackers and add a charred marshmallow on to finish. Devour!
  3. As a note, you can char the marshmallows on a gas range, under the broiler (watch them the entire time!) or even just get them melty in the microwave if you don't have a bonfire of sorts.
