S’mores Bars
Description
These S’mores Bars start with a dough combining butter, sugars, egg, and vanilla that is mixed with a blend of all-purpose flour and graham cracker crumbs. Half of this dough is pressed into the bottom of the pan forming a firm base. Chocolate bars are broken to fit evenly over the base and covered with marshmallow creme spread, creating the gooey center layer. The remaining dough is then carefully shaped and placed over the top to cover the marshmallow layer, protecting it during baking.
Baking at 350°F melts the chocolate and marshmallow together while cooking the dough into a slightly crisp edge and a chewy interior. The graham crumbs add a subtle crunch and honey-like flavor to the dough, echoing the graham crackers in traditional s’mores. The final result is a bar that combines the flavors and textures of the classic s’more treat in a portable, shareable form suitable for dessert or snacks.
Ingredients
- 1/2 /2 cup butter room temperature
- 1/4 /4 cup brown sugar
- 1/2 /2 cup sugar
- 1 egg large
- 1 teaspoon vanilla extract
- 1 1/3 /3 cups all-purpose flour
- 3/4 /4 cup graham cracker crumbs
- 1 teaspoon baking powder
- 1/4 /4 teaspoon salt
- 2 Hershey's chocolate bars if you want a more subtle chocolate flavor use regular sized chocolate bars; enough to fit, king-sized
- 1 1/2 /2 cups marshmallow creme 7 1/2 oz jar, fluff
Instructions
- Preheat oven to 350°F. Grease an 8-inch square baking pan.
- In a large bowl, cream together butter and sugar until light. Beat in egg and vanilla. In a small bowl, whisk together flour, graham cracker crumbs, baking powder and salt. Add the flour mixture to butter mixture and mix at a low speed until combined.
- Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan. Place chocolate bars over dough. 2 king-sized Hershey’s bars should fit perfectly side by side, but break the chocolate (if necessary) to get it to fit in a single layer no more than 1/4 inch thick. Spread chocolate with marshmallow creme or fluff. Place remaining dough in a single layer on top of the marshmallow creme.. This part can be tricky. I made little disks with the dough and formed them into a sheet on some parchment paper then transferred it over. Spread it around gently. You can also roll the top dough layer in between two sheets of plastic wrap until it's in a square then placed it on top.
- Bake S'mores bars for 25 to 35 minutes, until lightly browned. Cool completely before cutting into bars. Makes 16 cookie bars. These are great warmed up in the microwave for 10-15 seconds. Store leftovers in an airtight container,
