Description
The brownies start by creaming melted butter with sugars, then mixing in eggs, vanilla, cocoa powder, flour, and salt to form a thick batter baked partially in a 9x9 pan. While still hot, marshmallow fluff is spread evenly over the warm brownie layer, topped immediately with milk chocolate bars to melt slightly from residual heat. A separate graham cracker cookie dough made from creamed butter, sugars, egg, vanilla, graham cracker crumbs, flour, baking soda, and salt is dropped over the chocolate and pressed gently to cover.
The assembled bars bake further until the cookie dough is set and golden. After baking, they are chilled for at least an hour to allow the layers to firm up for clean slicing. The finished bars offer a moist brownie base, gooey marshmallow and chocolate center, and a mildly crisp cookie topping, evoking the layered flavors and textures of s'mores in a portable form suitable for dessert or sharing.
Ingredients
Brownies:
- 1/2 cup butter melted
- 2/3 cup sugar
- 1/3 cup brown sugar
- 2 egg
- 1 teaspoon vanilla
- 1/2 cup cocoa powder
- 3/4 cup flour
- 1/4 teaspoon salt
- 1 - 7.5- ounce marshmallow fluff or cream; jar
- milk chocolate bars Hershey Bars, Trader Joe's Pound Plus Bar, or Milk Chocolate Bar
Graham Cracker Cookie Dough:
- 1/2 cup butter softened
- 1/3 cup brown sugar
- 1/2 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 1 cup graham cracker crumbs
- 1 cup flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat oven to 325 degrees.
- In a medium bowl, melt butter. Stir in sugars and stir until creamy. Add eggs and vanilla and stir well until combined. Stir in cocoa, flour, and salt.
- Pour into 9 x 9 pan. Bake for 15-17 minutes.
- Carefully spread marshmallow fluff or cream over hot brownie. Cover marshmallows with milk chocolate bars.
- In a medium bowl, cream together butter and sugars until creamy. Add egg and vanilla until well combined. Stir in graham cracker crumbs, flour, baking soda, and salt.
- Drop on top of chocolate and carefully press down to spread evenly. Bake for 20-24 minutes or until set.
- Let chill for at least 1 hour before cutting. Place in refrigerator or freezer to give it time to set up before slicing.
