S'mores Brownie Skillet
Description
The recipe starts by creaming together wet ingredients like egg, Greek yogurt, nut milk, and vanilla extract before beating in sugars to ensure proper texture and sweetness. Cocoa powder, flour, baking powder, and salt are folded in carefully to maintain a fudgy consistency. Mini chocolate chips are stirred through the batter and it is poured into a greased skillet. A mixture of crumbled honey graham crackers and melted butter is microwaved and sprinkled on top before baking the brownie until just cooked in the center. Once baked, marshmallows are added atop and broiled until golden and toasted, creating a melty, lightly crisp topping reminiscent of campfire s'mores.
This dessert is warm and indulgent, suitable for serving straight from the skillet. It stores covered at room temperature for a few days and can be baked in a regular pan with an adjusted bake time.
To ensure a fudgier texture, beat wet ingredients fully before adding sugars, and fold in dry ingredients gently.
Ingredients
- 2 heets honey graham cracker
- 1 cup marshmallows
- 1 egg
- ½ cup light brown sugar
- ½ cup mini chocolate chips
- ¼ cup + 2 tbsp all-purpose flour
- ¼ cup Greek yogurt
- ¼ cup white sugar
- ¼ cup cocoa powder
- 2 tbsp nut milk
- 1 tsp vanilla extract
- ½ tsp baking powder
- salt pinch
- butter or oil
Instructions
- Preheat oven to 350°F. Grease your skillet using butter or oil to keep the brownie from sticking.
- In a mixing bowl, beat egg, Greek yogurt, nut milk, and vanilla extract until combined.
- Beat in brown sugar and white sugar.
- Fold in cocoa powder, all purpose flour, salt, and baking powder.
- After the batter is thoroughly mixed, fold in chocolate chips.
- Pour batter into your well greased skillet.
- In a microwave safe bowl, crumble 2 sheets of honey graham crackers. Place a tablespoon of butter in the bowl and microwave for 30 seconds. Use a fork to combine crackers and butter. Sprinkle over uncooked brownie.
- Bake for 18-20 minutes or until the middle is cooked.
- Once the brownie is done cooking, turn off the oven and turn on the broiler. Add marshmallows on top of your cooked brownie and place on the top rack of the broiler. Broil for 2-4 minutes or until marshmallows are a golden brown. Be sure to watch closely as they can burn easily!
Notes
- Beat wet ingredients together before adding sugars for a fudgier brownie texture.
- Fold dry ingredients in gently to avoid toughening the batter.
- Store the brownie covered with foil in the skillet for up to 3 days to maintain freshness.
- When baking in a regular baking dish instead of a skillet, add about 5 extra minutes to the bake time.
- Watch marshmallows carefully while broiling to prevent burning; golden brown is ideal.
