Description
S'mores Cereal Bars are a no-bake dessert that blends the flavors of classic s'mores into an easy-to-make snack bar. The recipe starts by melting butter with half the mini marshmallows over medium heat, incorporating light corn syrup and milk chocolate chips until smooth. This mixture serves as a sticky coating for the Golden Grahams cereal, which is stirred in and pressed evenly into a greased baking dish.
An additional layer of mini marshmallows is spread on top and toasted under the broiler to achieve a browned, toasted exterior, adding a contrasting texture and enhancing the marshmallow flavor. The cereal bars have a crisp and chewy texture with chocolate and marshmallow tastes balanced by the mild crunch of the cereal.
Cut into bars once cooled slightly. These treats are ideal for parties, snacks, or dessert and should be handled carefully when warm as the mixture is sticky and hot. Using cooking spray on hands helps prevent sticking when spreading the cereal in the pan.
Ingredients
- 3 tablespoons butter
- 12 cups mini marshmallows divided
- 12 ounces golden grahams (1 box)
- ½ cups light corn syrup
- 2 cups milk chocolate chips
Instructions
- Grease a 9-inch x 13-inch baking dish and wooden spoon. Set aside.
- Place a large pot over medium heat. Melt butter and 6 cups mini marshmallows together using your prepared spoon to stir things up.
- Add the light corn syrup and stir to combine.
- Add the chocolate chips and cook until melted, stirring constantly.
- Once the chocolate is melted, pour in the Golden Grahams cereal. Stir until cereal is coated in marshmallow/chocolate mixture.
- Pour cereal into your prepared pan and press down into an even layer. (I like to spray some non-stick cooking spray on my hands to keep things from sticking to them.)
- Spread the remaining 6 cups mini marshmallows on top of the treats in an even layer.
- Move oven rack to top slot and preheat the oven to broil.
- Once preheated, place pan into the oven. Toast until marshmallows are golden brown. This happens very quickly, so DO NOT walk away!
- Carefully remove from oven. Cut into 12 bars immediately, or let rest 5 to 10 minutes before cutting for cleaner edges.
Notes
- Spray your hands with non-stick cooking spray before pressing the cereal mixture into the pan to prevent it from sticking.
- Be cautious while handling the mixture as it can be hot right after cooking.
- Toast the marshmallows under the broiler very briefly and watch closely to avoid burning.
