Description
These cookies integrate flour and crushed graham crackers, lending a subtle crunch and signature flavor reminiscent of classic s'mores. The dough is creamed with butter, brown and white sugars, and enriched with eggs and vanilla. Ingredients
- 1 ½ cup flour
- 1 ½ cup graham crackers coarsely crushed
- ¼ tsp baking powder
- ¼ tsp salt
- ½ lb butter
- ¾ cup brown sugar
- ¾ cup white sugar
- 1 tsp vanilla
- 2 egg
- 1 cup chocolate chips
- 64 mini marshmallows
Instructions
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, crushed graham crackers, baking powder, and salt. Set aside.
- Cream Butter & Sugars: In a large mixing bowl, beat the softened butter, brown sugar, and white sugar until the mixture is smooth and well combined.
- Mix in the eggs one at a time, then add the vanilla extract and continue beating until fully incorporated.
- Combine Wet & Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined.
- Add Chocolate Chips: Gently fold in the chocolate chips.
- Scoop & Bake: Drop 2-ounce (about 2 tablespoons) portions of dough onto an ungreased baking sheet, spacing them apart. Bake at 350°F for 8 minutes.
- Add Toppings: Remove the cookies from the oven and quickly press 4 mini marshmallows and 2-3 pieces of chopped chocolate onto each one.
- Finish Baking: Return the cookies to the oven and bake for an additional 2 minutes, or until the marshmallows are golden brown.
