S'mores Cookies
Description
This recipe creates cookies with a chocolate-infused dough formed by mixing cocoa powder into the flour-based dry ingredients, which are combined with creamed butter and sugars. Adding graham cracker cereal and mini marshmallows folded into the dough introduces textural contrast and classic s'mores components.
The cookies are shaped into balls and gently pressed flat, allowing for even baking that melts the marshmallows slightly and softens the crackers while leaving chocolate chips dispersed through each cookie for additional richness.
These cookies cool on the baking sheet before transferring to a wire rack, helping them set without losing softness. They are well suited for dessert or snack occasions when you want a familiar campfire flavor without the open flame.
Ingredients
- ¾ cup granulated sugar
- ¾ cup brown sugar firmly packed
- 1 cup butter softened, unsalted
- 2 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- ⅔ cup cocoa powder unsweetened
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup graham cracker cereal
- 1 cup mini marshmallows
- 1 cup chocolate chips (milk or semi-sweet)
Instructions
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. Set aside.
- In a large mixing bowl, beat the butter, granulated sugar, and brown sugar until creamy and light in color. Add the eggs one at a time. Then, pour in the vanilla and mix. Scrape down the sides of the bowl.
- In a small mixing bowl, whisk together the flour, cocoa powder, baking powder, and salt. Slowly add the flour mixture to the wet ingredients until combined.
- Stir in the graham cracker cereal, mini marshmallows, and chocolate chips with a rubber spatula.
- Scoop 1/4 cup of the cookie dough from the bowl and then use your hands to form it into a ball. Place on the prepared baking sheet and gently press down so the bottom is a bit flat. Repeat with the rest of the cookie dough, spacing the cookies 3 inches apart.
- Bake for 15-18 minutes or until the cookies are set.
- Remove from the oven and allow to cool on the baking sheet for 5 minutes. Then transfer the cookies to a wire rack to cool completely.
