Smores Dessert Bars
Description
The Smores Dessert Bars recipe starts with a pressed graham cracker crust baked briefly to hold its shape. The cookie top is a classic dough creamed with butter and sugars, enriched by eggs and vanilla, then combined with flour, salt, and baking soda for leavening. Chocolate chips and most of the miniature marshmallows are folded into the dough to distribute melty pockets throughout. After spreading the dough over the crust carefully to avoid mixing, the bars are baked to set. They are then topped with chunks of chocolate bars and the remaining marshmallows and baked again until golden, creating a contrast of textures from the crispy crust to the soft, sweet, and melty topping. These bars are a convenient way to enjoy s'mores flavors without the need for a campfire, suitable for serving as a dessert or snack. The recipe suggests optionally sprinkling extra chocolate chips on top after baking for enhanced appearance, though the bars are already rich in chocolate flavor.
Ingredients
Graham cracker crust
- 2 1/4 cups graham crackers (1 1/2 sleeves, crushed)
- 2/3 cup butter melted, salted
- 1/3 cup granulated sugar
Cookie top
- 1 cup butter softened, salted
- 3/4 cup granulated sugar (150g)
- 3/4 cup brown sugar 150g, packed
- 2 egg large
- 1 teaspoon vanilla
- 2 1/4 cups all-purpose flour scooped and leveled (317g)
- 1 teaspoon salt
- 1 teaspoon baking soda
- 3 cups miniature marshmallows divided
- 1 cup chocolate chips semi-sweet
- 3 chocolate broken up, Hershey bars
Instructions
- Preheat the oven to 350°F. In a medium bowl, mix together the graham cracker crumbs, melted butter, and sugar using a fork, then press the crumb mixture into the bottom of a 13×9-inch rectangular greased baking dish. Bake for 7 minutes, then remove from oven and allow to cool slightly.
- Meanwhile, cream the butter and sugars together. Add in eggs and vanilla and beat well until light and creamy. Stir in flour, salt and baking soda just until combined. Then mix in the chocolate chips and 2 cups of the marshmallows by hand.
- Carefully spread cookie mixture over the graham cracker crust by dropping spoonfuls of batter evenly around the dish and then gently pressing it together so you aren't disturbing the graham cracker crust beneath.
- Bake for 18 minutes at 350°F, then quickly remove from the oven, top with broken pieces of Hershey Bars and sprinkle with remaining 1 cup marshmallows. Return to oven to finish baking. Bake 9-11 minutes more, until golden brown on top. The center should be mostly set but still just a little undercooked. Don't overcook - you want to eat these just a little on a the gooey side, trust me.
- Remove and allow to cool completely before cutting and serving.
Notes
- For an appealing finish, sprinkle additional chocolate chips on top after baking.
- Handle the cookie dough topping gently when spreading over the crust to maintain the crust's integrity.
