S'mores Pie

S'mores Pie features a bittersweet dark chocolate whipped cream filling set in a graham cracker crust, topped with a layer of marshmallow creme that is toasted under the broiler. The combination replicates the classic campfire flavors of s'mores in an easy no-bake pie form. The pie balances the richness of chocolate with the sweetness and slightly caramelized texture of toasted marshmallow. It’s a show-stopping dessert that can be prepared ahead and frozen until serving.

Description

S'mores Pie begins by melting dark chocolate with high cocoa content slowly over low heat. Heavy whipping cream is whipped with sugar until it reaches medium peaks before being gently combined with the melted chocolate to form a silky, airy mousse-like filling. This filling is poured into a 9-inch graham cracker crust that serves as the crunchy base to complement the creamy texture.

Once the filling is set with plastic wrap pressed to the surface, the pie freezes for several hours to overnight for a firm, sliceable dessert that contrasts the smooth chocolate filling with the crumbly crust. Immediately before serving, the pie is topped with marshmallow creme and browned quickly under the broiler, forming a golden, lightly crisped marshmallow layer that echoes the s'mores campfire tradition.

This pie offers a rich, less sweet chocolate experience thanks to the bittersweet chocolate, which can be adjusted to sweeter semi-sweet or milk chocolate if preferred. Using a kitchen torch instead of the broiler to toast the marshmallow topping provides more control to avoid burning. The pie can be stored frozen and thawed slightly before serving, making it convenient for entertaining.

Notes

  • The bittersweet chocolate filling creates a less sweet, more sophisticated flavor; substitute semisweet or milk chocolate for a sweeter pie.
  • A kitchen torch can be used instead of the broiler to toast the marshmallow topping gently.
