Smothered Cauliflower

A lovely old-fashioned baked cauliflower recipe.

Ingredients

  • 1 small-med cauliflower
  • 60 grams butter
  • 1 cup tomato passata (or use ⅔ cup tomato paste mixed with ⅓ cup water)
  • 1 cup cheddar cheese grated
  • cup bread crumbs (panko work well but you could use other types)
  • salt
  • black pepper

Instructions

  1. Pre-heat oven to moderate (180 degrees celsius, fan-forced).
  2. Remove the leaves and any excess stem from the cauliflower. Boil in a large saucepan for 5 minutes.
  3. Grease a large baking dish with oil or butter and place the whole cauliflower in the dish. Cut cauliflower into large slices.
  4. Cut butter into cubes and sprinkle over cauliflower.
  5. Pour passata over the cauliflower.
  6. Sprinkle cheese and breadcrumbs over the cauliflower.
  7. Season with a little salt and pepper.
  8. Place into oven and bake for 45 minutes or until a golden colour.
