Snickerdoodle blondies are delicious bar versions of the famous cookie. They're soft and sweet and half the work!

Ingredients
- 1 cup sugar
- ½ cup butter
- ½ teaspoon salt
- 1 egg
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F and line an 8x8-inch baking dish with parchment paper.
- In a mixing bowl, cream butter and sugar until smooth. Beat in egg, vanilla, and salt.
- Stir in flour and mix well.
- Pour the mixture into a greased pan.
- Combine sugar and cinnamon and sprinkle over the top.
- Bake for 25-30 minutes.

- Store in an airtight container for 3-4 days, or freeze for up to 3 months.
- Double the recipe ingredients and bake in a 9x13 pan. Bake for 30-35 minutes.
- The parchment paper not only makes for easy cleanup, but you can use it to lift out the block to easily slice into bars.
- For a fun variation, I often mix cinnamon chips or white chocolate chips into the dough.
