Snickerdoodle Mug Cake
Description
Snickerdoodle Mug Cake is prepared by whisking together dry ingredients—flour, sugar, cinnamon, and baking powder—then blending in milk, melted butter, and vanilla extract to create a smooth batter. The batter is alternately layered in a mug with cinnamon sugar, adding a characteristic spiced sweetness. Microwaving the mug for about 75 to 90 seconds cooks the cake quickly, producing a moist, soft texture reminiscent of a traditional snickerdoodle cookie but in cake form. The cake should be served shortly after cooking to avoid drying out.
The cinnamon sugar spread throughout the batter provides bursts of warmth and sweetness in each bite, and the convenience of mixing and baking in the mug means minimal cleanup and preparation. This recipe is ideal when you want a personal dessert and suits occasions when you want just a small portion without leftovers.
Using a large enough mug (at least 11 ounces) is important to accommodate rising batter and prevent overflow. Cooking times may need slight adjustment based on your microwave's power. A microwave-safe plate or napkin beneath the mug can catch any spills during cooking.
Ingredients
Mug Cake:
- 5 tablespoon all-purpose flour 1/3 cup plus 1 tablespoon
- 2 tablespoon sugar
- 1/4 teaspoon baking powder
- 1/3 teaspoon ground cinnamon
- 1/4 cup milk at room temperature, 60 ml
- 2 tablespoon butter melted and cooled, salted
- 1/2 teaspoon vanilla extract pure
Cinnamon Sugar (for layering and topping):
- 3/4 tablespoon sugar
- 1/3 teaspoon ground cinnamon
Instructions
- Mix together the cinnamon and sugar for layering and set aside.
- In a mixing bowl, whisk together the flour, sugar, baking powder, and ground cinnamon.
- Whisk in milk, melted butter and vanilla extract until well combined.
- Fill the mug by alternating adding the batter, then cinnamon sugar mixture till all the batter is added then sprinkle remaining cinnamon sugar on top.
- Microwave on HIGH for 75-90 secs.
- Let stand for a few mins before serving. Don’t wait too long as the mug cake dries out the longer it sits.
Notes
- Use an 11 oz or larger microwave-safe mug to allow for batter rising and prevent overflow.
- Because microwave power varies, adjust cooking time slightly to avoid undercooking or drying out the cake.
- Serve the mug cake shortly after cooking to retain moisture and softness.
- It is easier to mix ingredients in a separate bowl before transferring to the mug, though mixing directly in the mug saves on dishes.
- This recipe can be scaled up and divided into multiple mugs for serving more people.
- Place a microwave-safe plate or napkin under the mug to catch any potential overflow during cooking.
