Snow Pea Leaves with Garlic

Snow Pea Leaves quickly stir-fried with garlic, seasoned with salt, white pepper, and finished with sesame oil create a vibrant, tender vegetable side dish. The leaves are thoroughly cleaned to remove dirt and cooked over high heat to preserve their bright green color and fresh flavor. The garlic adds an aromatic pungency balanced by the nutty sesame oil.

Description

This recipe for Snow Pea Leaves with Garlic begins with soaking and washing the leaves thoroughly to remove grit. The leaves and stems are then cooked in a wok with vegetable oil over high heat. Finely chopped garlic is added early to infuse the oil, followed by salt, white pepper, and a finishing drizzle of sesame oil. The stir-fry is covered briefly to allow the leaves to soften while retaining their brightness.

The quick high-heat method helps maintain the delicate tender texture of the leaves while developing a slight garlic aroma without overcooking. The seasoning blend keeps the dish simple, highlighting the natural sweetness and mild flavor of snow pea leaves.

This preparation serves well as a light side dish accompanying a larger meal, balancing richer proteins or starches with its gentle flavor and fresh texture.

Ingredients

Servings
  • 1 pound snow pea leaves (450g)
  • 3 tablespoons vegetable oil
  • 3-5 cloves garlic (finely chopped, depending on how much you like)
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon white pepper
  • 1 teaspoon sesame oil

Instructions

  1. Soak snow vegetables in a large bowl or other container for 1 to 2 hours. Then wash thoroughly (2 to 3 times) to get rid of all the dirt and sand clinging to the leaves and stems. Drain off all the water.
  2. Using very high heat, heat oil in your wok until it just starts to smoke a bit. Quickly add the garlic and the veggies, taking care not to burn them by constantly stirring. After a minute, add salt, cracked white pepper, and sesame oil. Stir and mix well.
  3. Put the lid on the wok and cook for about 1-2 minutes. Remove lid, stir briefly, and transfer to a dish.
  4. Tip: don't open the lid more than once during cooking, as it will cause the vegetables to lose their green color!
