Snowball Cookies

Snowball Cookies combine butter, pecans, and miniature chocolate chips into small dough balls baked until lightly browned. After baking, they are rolled twice in powdered sugar, first warm, then cooled, creating a sweet, crumbly coating reminiscent of a snowball. The texture is tender but holds shape well, ideal for festive occasions or anytime a lightly sweet crumbly cookie is desired.

Description

Snowball Cookies are made by creaming softened butter with granulated sugar, then mixing in vanilla extract, flour, chopped pecans, and miniature chocolate chips to form a crumbly dough. The dough is shaped into small one-inch balls spaced on baking sheets and baked at 325°F until they turn light brown, around 16 to 18 minutes. Cooling briefly before rolling in powdered sugar and repeating after full cooling achieves the classic powdery coating characteristic of snowball cookies. The pecans add a subtle crunch and nuttiness while the chocolate chips lend occasional bursts of sweetness.

These cookies hold a compact round shape with a tender crumb contrasting the sugary coating. Their size and mild chocolate presence make them suitable for holiday cookie trays, afternoon snacks, or gifts.

Maintaining smaller cookie sizes helps preserve shape during baking. Measuring scoops ensure consistency in size. Finely chopping pecans promotes even distribution throughout the dough. Rolling in sugar twice locks in the signature powdery surface.

Ingredients

Servings
  • 1 cup butter softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup pecan finely chopped
  • 1/2 cup miniature chocolate chips
  • 1 1/2 cups powdered sugar

Instructions

  1. Preheat the oven to 325 degrees F. Line two sheet pans with parchment paper or nonstick baking mats.
  2. Place the butter and granulated sugar in the bowl of a mixer and beat until light and fluffy.
  3. Add the vanilla extract and beat for 30 seconds.
  4. Add the flour, pecans and chocolate chips. Mix on low speed until a crumbly dough forms.
  5. Roll the dough into 1 inch balls and place 1 1/2 inches apart on the prepared pans.
  6. Bake for 16-18 minutes until light brown. Let the cookies cool for 5 minutes, then roll them in the powdered sugar.
  7. Let the cookies cool completely then roll again in powdered sugar. Serve.

Notes

  • Keep cookie size small (about 1 inch) to maintain round shape during baking.
  • Use a cookie scoop or measuring spoon for consistent cookie sizes.
  • Roll cookies twice in powdered sugar: once warm and again after cooling to set the coating.
  • Finely chop pecans so they spread evenly through the dough.
