Ingredients

  • 2 ¼ cups all-purpose flour
  • 1/2 teaspoon cloves ground
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 3/4 cup butter softened, unsalted
  • 1 cup granulated sugar plus extra for rolling cookies in
  • 1/4 cup dark molasses
  • 1 egg large
  • 1/2 cup crystallized ginger optional, chips

Instructions

  1. Preheat oven to 375°F
  2. Whisk together dry ingredients, set aside.
  3. In another bowl, cream together butter and sugar until light and creamy.
  4. Add molasses and egg, mix until combined.
  5. Pour in dry ingredients, mix well.
  6. Stir in ginger chips, if using.
  7. Chill dough for 1 hour.
  8. Roll dough into 1 inch balls and roll each ball in extra granulated sugar.
  9. Place on a lined baking sheet 2 inches apart. Bake for 8-10 minutes, remove from oven while still soft. Allow to cool on the baking sheet.
  10. Makes about 30 cookies.
