Soft and Chewy Peanut Butter Caramel Popcorn
Description
Starting with 10 to 12 cups of popped popcorn, this recipe crafts a smooth caramel sauce by boiling granulated sugar and light corn syrup. After removing from heat, peanut butter, vanilla extract, and a pinch of kosher salt are stirred in until fully mixed. The warm, creamy caramel is poured over the popcorn immediately, allowing the mixture to coat each piece evenly.
The resulting popcorn offers a contrast between the crisp popped kernels and the soft, chewy peanut butter caramel clinging to them. The recipe can be adjusted to increase or decrease the ratio of caramel to popcorn to suit personal preference, affecting sweetness and texture.
This popcorn is ideal as a snack for casual occasions, easily made fresh and served right away while still soft. It does not require baking or additional cooking, making it accessible and quick to prepare.

- 10-12 cups Popcorn popped, see note
