Soft and Fluffy Sugar Cookies with Vanilla Frosting
Description
Soft and Fluffy Sugar Cookies with Vanilla Frosting begin with a dough made from cake flour, baking powder, butter, sugar, eggs, sour cream, and vanilla extract. The cake flour and sour cream contribute to a tender and delicate texture, while the eggs and baking powder help with lightness. After chilling, the dough is rolled, shaped into balls, pressed flat, and baked until just puffed and slightly browned at the edges. The accompanying vanilla frosting is made by combining softened butter, sifted powdered sugar, milk, and vanilla, resulting in a creamy and smooth icing that complements the subtle sweetness of the cookies. Sprinkles can be added for a decorative touch. This cookie recipe allows for making a batch of mini cookies or fewer larger cookies, depending on your preference.
The texture is light and fluffy, not crispy or crunchy, with a soft crumb that melts in the mouth. The vanilla frosting adds a rich, sweet layer with a smooth consistency. Since the cookies bake quickly and are modestly colored, they maintain a delicate appearance and texture. The frosting can be spread on once the cookies have completely cooled for best results.
This recipe is suitable for gatherings or casual snacking, and the option to choose cookie size makes it flexible for sharing or portion control. The classic flavor pairing of buttery sugar cookie with vanilla frosting fits well with afternoon tea or as a festive treat.
Chilling the dough before baking is important to keep the cookies from spreading too much and helps maintain their soft texture. Using cake flour rather than all-purpose flour ensures the final cookies stay tender. The frosting should be prepared smooth, and chilling it briefly before spreading can help with easy handling. Store in an airtight container to retain softness.
Ingredients
cookies
- 3 cups cake flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter softened
- 1 cup sugar
- 1 large egg plus 1 large egg white, lightly beaten together
- 2 tablespoons sour cream
- 1 teaspoon vanilla extract
frosting
- ½ cup butter unsalted, softened, 1 stick
- 1 pound powdered sugar sifted
- 3 tablespoons milk
- 1 ½ teaspoons vanilla extract
topping
- Sprinkles of choice, optional
Instructions
- Preheat oven to 350˚F.
- In a large mixing bowl whisk together flour, baking powder and salt. Set aside.
- In a stand mixer, fitted with a paddle attachment, cream together butter and sugar until soft and fluffy.
- Add beaten eggs and continue to mix together. Scrape down the sides of the bowl and add the sour cream and vanilla. Mix together (mixture will look lumpy and not entirely together).
- Add the dry ingredients and mix together until everything is fully incorporated and completely combined.
- Cover dough with plastic wrap (directly on the surface) and refrigerate for about 30 minutes.
- Roll 2 tablespoon sized balls of cookie dough, using your hands and place on a baking sheet lined with parchment, about 1 inch apart. Using the bottom of a sterilized measuring cup or can, gently press the tops of each cookie down so they have a flat top.
- Bake cookies for about 9 minutes or just until they puff up and barely begin to brown along the bottom edges (the surface should still be pale and white).
- Remove cookies from the oven and allow them to cool for about 5 minutes before transferring them to a cooling rack to completely cool.
- Frosting: Place all the ingredients into the well of a stand mixer (fitted with a paddle attachment) and beat together until soft and fluffy, 6 to 8 minutes.
- Once cookies have cooled completely, frost the tops with the frosting and finish with sprinkles, if using. Serve.
Notes
- You can make 48 mini cookies or 24 large cookies, depending on the size you prefer.
- Chilling the dough before baking helps keep the cookies soft and prevents excessive spreading.
- For best frosting results, allow cookies to cool completely before applying the vanilla frosting.
- Sprinkles can be added to the frosting for a decorative finish, but they are optional.
