Soft Apple Cookies (Homemade Apple Softies)

Soft Apple Cookies blend fresh and dried apples with warm cinnamon and nutmeg spices to create tender, chewy cookies. The apple mixture is cooked down before folding into a brown sugar and butter dough, giving a moist texture and fruity flavor. Topped with a simple icing, these cookies offer a delightful homemade treat that highlights autumn flavors.

Description

Soft Apple Cookies combine fresh chopped golden delicious apples and chopped freeze-dried apples with apple jelly and warm spices like cinnamon and nutmeg. The apples are gently cooked to concentrate their flavors and remove excess moisture before being integrated into a creamed butter and brown sugar dough with the addition of an egg yolk and baked with baking soda for lift. The cookies are soft and tender, with a subtle fruity sweetness enhanced by the apple jelly and icing.

The process involves pre-cooking the apple mixture to reduce liquid, then folding it into the dough to maintain softness without sogginess. Baking at 350 degrees Fahrenheit finishes the cookies with a gentle golden edge. A simple icing made from powdered sugar, corn syrup, and water finishes the cookies with a subtle sweetness and glossy finish.

These cookies suit a cozy snack or dessert occasion, offering the familiar warmth of apple spice flavors and a moist, tender crumb that holds soft apple pieces. The combination of fresh and dried apple contributes texture and depth to the cookies.

Store the cookies in an airtight container to keep them soft and fresh for up to one week, or freeze for longer storage. The recipe’s balance between cooked apple moisture and flour ensures a consistently soft cookie texture.

Ingredients

Servings
  • 1 1/2 cup apple I used golden delicious, peeled and chopped
  • 1/4 cup dried apple I used freeze-dried, chopped
  • 1/4 cup apple jelly
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 2 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 1 cup butter softened, unsalted
  • 3/4 cup light brown sugar
  • 1 egg large, yolk

Icing

  • 2/3 cup powdered sugar
  • 1/2 tsp light corn syrup
  • 1-2 tbsp water warm

Instructions

  1. Preheat the oven to 350˚F. Grease baking sheets with nonstick spray or line with parchment paper.
  2. Put chopped apple, apple jelly, cinnamon, and nutmeg in a small saucepan. Bring it to medium-high heat and cook for 3 minutes. When the apple releases its juices and start to thicken, add the dried apple pieces and continue to cook for another 2 minutes stirring occasionally. When the juice is mostly cooked off, transfer the apples to a small plate and let it cool for 10 minutes.
  3. Whisk together flour, baking soda, and salt in a mixing bowl; set aside.
  4. In a stand mixer with a paddle attachment, cream butter and brown sugar on a medium speed until light and fluffy. Add egg yolk and continue to beat until the mixture is well mixed and creamy. Turn the mixer to low speed, add flour mixture to butter mixture and mix until combined.
  5. Add the reserved apples and stir until combined. Let the dough sit for 5 minutes.
  6. Scoop the dough out using a medium cookie scoop (about 1 1/2 tablespoon) and drop onto prepared baking sheet. Flatten slightly. Bake in 350˚F oven for 9-12 minutes or until cookies are set. Cool the cookies on a wire rack.
  7. To ice the cookies, mix powdered sugar, corn syrup, and warm water in a bowl to make icing. Drizzle icing over cooled cookies.

Notes

  • Store cookies in an airtight container or cookie jar for up to one week to maintain softness.
  • You can freeze the cookies for up to three months for longer storage.
