Soft Baked M&M Pumpkin Protein Oat Bars
Description
These protein oat bars mix vanilla protein powder or flour with oat flour, sweetener, and traditional fall spices such as cinnamon, nutmeg, and baking leaveners. The wet ingredients include pumpkin puree, unsweetened applesauce, egg whites, vanilla extract, and almond milk to provide moisture and structure. Thoroughly blending the wet and dry ingredients forms a batter that's spread evenly in a baking pan.
Sprinkling mini M&Ms on top before baking adds a colorful chocolate element. Baking at 350°F for 20-25 minutes produces bars with a soft texture that holds together well without being dry. The pumpkin puree gives moisture and a mild earthy flavor, while the spices and chocolate pieces add warmth and sweetness.
These bars are suitable for snacks or light breakfasts and can be stored in the refrigerator or freezer for convenient grab-and-go portions. Substitutions for dairy-free needs can be made by adjusting milk and chocolate ingredients accordingly.
To make dairy-free, use dairy-free milk and substitute M&Ms with dairy-free chocolate chips.Store bars airtight in the refrigerator for up to 5-6 days or freeze for 3-4 months to maintain freshness.
