Soft Banana Cookies

Soft Banana Cookies combine ripe bananas and almond butter with a mix of all-purpose flour and nutritious seeds to create cookies that are moist and tender. Additional flavors from cacao powder, cinnamon, and mini dark chocolate chips contribute to a rich taste. The cookies bake to a soft texture, with the option to top with banana slices for extra moisture and presentation.

Description

These Soft Banana Cookies start with mashing ripe bananas blended with almond butter, water, and vanilla extract, yielding a smooth base. The batter incorporates flour (all-purpose or almond for gluten-free), chia seeds, hemp hearts, cacao powder, baking powder, cinnamon, and salt for structure and flavor. Mini dark chocolate chips folded in add bursts of chocolate.

Portioned onto parchment-lined baking sheets and optionally topped with banana slices, the cookies bake at moderate heat until just set but still soft. They maintain a chewy consistency and subtle sweetness from the bananas and chocolate.

These cookies work as snacks or breakfast treats with a wholesome profile. Chilling or freezing after baking is convenient for preserving freshness and ready access.

Ingredients

Servings
  • 2 banana ripe, medium
  • ½ cup almond butter
  • ¼ cup water
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour you can sub for almond flour if you prefer
  • 1 tablespoon chia seeds
  • 1 tablespoon hemp hearts
  • 1 tablespoon cacao powder
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • cup dark chocolate chips mini

Instructions

  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  2. In a stand mixer, beat together bananas, almond butter, water and vanilla until smooth. Add the almond flour, chia seeds, hemp hearts, cacao powder, baking powder, cinnamon and salt and mix until combined. Fold in chocolate chips.
  3. Place 12 cookies onto the baking sheet evenly, 2-3 tablespoons each.
  4. If you have more banana, add a slice to the top of each cookie.
  5. Bake for 13-15 minutes - you want them to still be a little soft. Cool and serve.

Notes

  • Substitute almond flour for all-purpose flour to make the cookies gluten-free.
  • Cool completely before freezing to maintain texture integrity.
  • Freeze baked cookies to have a ready supply for snack time.
