Soft pitas or small tortillas made from sweet potato and oat flour

Easy and quick to make soft pitas or small foldable tortillas from just sweet potatoes and oat flour. Glutenfree, fatfree and vegan.

Ingredients

  • ½ cup sweet potato roasted/cooked and mashed
  • ½ cup oat flour

Instructions

  1. For this recipe you have to make mashed sweet potato first. This can be done by pealing them and steam them cut in cubes for 20 minutes. Or roast them in the oven at 430F or 220 C for about half an hour to 45 minutes (or even more if you have realy large potatoes).
  2. Mix the flour with the mashed sweet potatoes. First with a fork, than knead by hand. Let it rest for a bit so the oat flour can absorb the fluids from the potatoes.
  3. Prepare two small pieces of parchment paper with a little bit of flour.
  4. Divide the dough into two balls. Form a small flat in your hand. Place it on the parchment paper. By hand widen the pita/tortilla of at least 5 inches (12 cm) or just a bit bigger.
  5. Then flip the pita/tortilla over and place in a hot pan. Bake for 2 minutes. In the meantime, take away the parchment paper.
  6. Then bake on the other side for 1.5 or 2 minutes.
